Description
We present natural Scots pine essential oil for foods, obtained from the needles of the evergreen forest plant with the botanical name Pinus sylvestris. It is offered under the name White Pine natural essential oil for food. The composition includes only the volatile compounds of the mountain raw material, while its natural purity remains intact. Monoterpenes lead the volatile fraction, while sesquiterpenes and diterpenes complete the terpene picture. Preservatives and colourants do not enter this picture, as the oil retains its entirely natural profile. The profile originates from a coniferous tree of the Pinaceae family that grows on the mountain slopes of Bulgaria and tolerates poor, dry soils. The Bulgarian populations are located in the Rhodopes, Rila, Pirin and Osogovo, with a more limited presence in the Plana, Vitosha, Lozen and Slavyanka mountains. The trees in these stands live for centuries and tolerate drought and winter frosts on exposed rocky ridges. The stands regenerate under natural cultivation, which is why the needles develop their full range of terpenes. Steam distillation separates this range from the raw material and leaves the scent pure and faithful to its forest source. The scent has a fresh character and is strong and refreshing. The needles also leave a greenish sheen, so the colour ranges from pale yellow to yellow-green in the product's liquid medium. The product's fresh scent has a clearly defined coniferous character. The needles of the pine stands in the high mountain environment provide a concentrated reserve of volatile substances that passes entirely into the product's finished liquid.
Application
Scots pine oil brings a fresh coniferous character and subtle herbal depth to a wide range of culinary products. In savoury cooking, it is used in vegan sauces, marinades and pâtés, as well as in gourmet starters, spreads and hot soups, where the subtle pine nuance highlights the natural flavour of the ingredients. It is suitable for flavouring pesto, kernel pastes and creams, olive oil blends and culinary oils, as well as sauces for pizza, lasagne, rice dishes and potato specialities. In baked goods such as wholegrain breads, savoury muffins, crackers and gluten-free baked products, the oil adds a light mountain accent that combines well with herbal seasonings. Snack manufacturers add it to crisps, savoury bars and crunchy bites, while in fresh and processed cheeses and in vegan sausages it creates a distinctive aromatic profile. It is also suitable for salad dressings, toppings, dips, purées, broths and cream soups, seasoning blends and dry spices, as well as fillings for pancakes, sandwiches and snacks. Fermented foods, canned vegetables, vegetable burgers and patties, smoothies and grain bowls can also be enriched with its refreshing flavour, making it a practical choice for gourmet side dishes and culinary innovations.
